Recipe

I made this for my classmates last week -- it was nearly Halloween! Joyce asked for the recipe, so I'm posting it here.




Pumpkin Bread

Ingredients:
210g plain flour
1/2 tsp salt
200g sugar
1 tsp baking soda
250g pumpkin puree
120ml safflower oil
2 eggs, beaten
60ml milk or soy milk
1/4 tsp ground nutmeg
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ginger powder (optional)
100g coarsely chopped walnuts or pecans (optional)

Method:
Make the pumpkin puree by baking pumpkin (deseeded) on a baking tray at 180°C for about 50 minutes. Cool and then scoop out the flesh and mash it by hand or or puree it with blender. Sift together the flour, salt, and baking soda.

Mix sugar with the eggs. Add to this the oil, water, and spices. Finally, add the pumpkin puree to this.
Little by little, add the dry ingredients to the wet mixture, being careful not to overmix. Gently add in nuts, if using, and then pour the batter into a well-greased loaf pan. Make sure oven is preheated and bake at 180°C for about 50 minutes or until a toothpick/skewer inserted into the center of the loaf comes out cleanly.

Turn the loaf out onto a wire rack and allow to cool completely before slicing.
